- Minestrone of crayfish from Lake Geneva infused with Kaffir lemon leaves.
- Fera fillet from Lake Geneva and reduced carrots with yuzu juice.
- “Caïon” beets and hibiscus juice.
- Macaroon with squash and oranges, creamy with Tonka bean.
Thursday, March 21, 2019.
- Risotto of small pasta and crayfish from Lake Geneva with combawa zest.
- Lotte in a belly shirt and green asparagus.
- Can breast and rhubarb.
- Strawberries refreshed with orange, sherbet with cottage cheese and fragrant asperula.
The course of the day:
- Participants arrive around 8:30 am with welcome coffee, presentation of the day,
- the course starts at 9am and finishes around 12:30pm/13pm,
- the meal is then organised in the restaurant and the participants will have the pleasure of tasting what they have prepared.
